Beth’s Basic Bread Book by Beth Hensperger (Chronicle, 1996) seems to be out of print or retitled as Bread and redesigned. There are used and new copies available, and you can check out all her other books — seems she’s a very prolific baker and writer — on her website: http://www.bethhensperger.com/thebooks.htm
What I love about this book is the way the critical steps are laid out with drawings and the step by step instructions. The photos are amazing as well. She provides a beginning baker with a wide repertoire of breads to work with. If you can’t find this book, I’m sure any of her books would be wonderful.
I bought this book in 1997 and spent many weeks baking my way through her book. After the first couple recipes, I already knew so much and felt confident that I could bake bread! And that’s saying a lot . . .
