This is a quick and easy oat bar that makes great cookie bars or “slices”. You use one cup of rhubarb jam, although raspberry jam or strawberry jam would also be delicious. Better yet, how about roasted strawberry rhubarb jam!
Mix together 1 cup of flour, 3/4 cup oatmeal, 1 packed cup of brown sugar, 1 teaspoon salt and 1/2 cup of room temperature butter.
Reserve 3/4 cup of mixture for topping, and press the rest into a 9 inch circular pan if making slices, or an 8 x 8 square pan if making cookie bars.
Spread 1 cup rhubarb jam over the top.
Sprinkle streusel on top of that. Bake at 350 for 40 minutes or until crumb topping has browned and jam has bubbled.
Cool before slicing. This is also great as a breakfast bar!
